Mashed Tater Cakes

Love love LOVE me some tater cakes!

  • 2 cups left over mashed potatoes
  • 1 egg
  • 1/2 cup shredded cheddar
  • butter or oil for frying

Combine taters, egg, and cheese in a mixing bowl.

Heat oil/butter over medium-high heat.  Drop cake batter by heaping spoonful into the pan and flatten out with spatula.  Cook 3-4 minutes until golden and then flip and brown the other side. 

Remove from pan and gobble them up! YUM!
